Recipe: Grilled Corn on the Cob with Sambal Butter
*Sambal is a chili-based sauce condiment popular in Asia, South Africa, Sri Lanka, and in the Netherlands
8 oz. unsalted butter (2 sticks)
½ Cup Sambal
In small sauce pan, over low heat, melt the butter. Add the Sambal and let the mixture steep until the flavors fuse. Reserve the Sambal Butter sauce for the finished corn.
Grilled Sweet Corn
8 ears of Sweet Corn, husk removed
½ Cup Vegetable Oil
Salt and Pepper
Preheat the grill. In a bowl toss corn with oil, salt, and pepper. Using high heat, grill the corn 2 to 3 minutes per side or until the corn gets marked with char and starts to caramelize. Remove the corn from grill, place in a heat tempered bowl, and drizzled in Sambal Butter Sauce. Toss the corn, fully coating each piece. The dish is best when served hot.
